Inlet and outlet hose temps near the head should suffice.
Measuring load amps or watts is also important.
Don't add water injection until the engine is fully up to temperature.

I have a 195F thermostat on mine, and the top of the head gets up to temp in about 20 minutes with a 2500w load (It's often starting with 40F environment) and I'll try to get some measurements this fall when the cloudy season starts
