Thanks for the pictures!  I'm enjoying this!

How do the valves come out?  I'm missing something - there must be cover on top?  Wouldn't it need a gasket similar to a head gasket?

Congratulations on your successful first smoke!  I'm sure you'll have her purring shortly.
